Spring is a rejuvenating time of year for foodies. The turn of the season brings refreshing recipes full of first-of-the-season produce. This spring we put on our creative chef hats to develop this line-up of fun Easter dinner ideas. We ditched the ham and hard-boiled eggs for a more exciting - and festive - spread. These novel Easter foods will quickly become new family favorites.

Appetizer: Easter Egg Rolls

Dying Easter eggs is fun for kids, but for parents it can be, well, a disaster. If last year's stains have left a "mark" on you, ditch the dye and opt for Easter egg rolls instead. Use this clever play on words to celebrate the occasion 100% dye-free. Simply pop your favorite Kahiki Egg Rolls in the oven, and serve them in a basket with a clean green cloth or Easter grass.

Entrée: Spring (Tempura) Chicken "Nests"

At Kahiki we fully support playing with food. Serve this whimsical dish family-style, or plate individual nests for each person. Kids will love building their own nests from noodle "twigs" and Tempura Chicken "eggs."

Ingredients for 4 Servings:

  • Kahiki Tempura Chicken(any flavor)
  • 8 oz brown rice noodles
  • 1 Tbsp oil
  • 1 cup matchstick carrots
  • 1 cup peas

Cook Tempura Chicken and rice noodles according to packages.

Meanwhile, heat oil in skillet over medium. Add carrots and cook until softened. Add peas and half of Kahiki sauce. Stir to heat through, then remove from heat and set aside.

When noodles are done, lightly drain them and toss with a small amount of Kahiki Tempura Chicken sauce to prevent them from sticking together.

To assemble, place a pile of noodles in the center of 4 plates. Evenly divide vegetable mixture over noodles. Lastly, top with Tempura Chicken and drizzle with remaining sauce.
