Kung Pao Chicken

Entree Ingredients:Sauce Ingredients:
  • 1 1/2 lbs. Chicken meat, cut in bite size pieces
  • 1/2 tsp Salt
  • 1 Egg White
  • 1 Tbsp Cornstarch
  • 4 Tbsp Peanut oil, divided
  • 1/2 cup Skinless roasted peanuts
  • 10 Whole dried red chili peppers
  • 4 Green onions, cut into 1/2 inch lengths
  • 1/2 cup Cloves garlic, minced
  • 1/2 Diced water chestnuts (optional)
  • 1 tsp Chili paste with garlic
  • 2 Tbsp Soy sauce
  • 1 Tbsp Sherry
  • 1 tsp Rice vinegar
  • 1 tsp Sugar
  • 1/4 cup Chicken broth
  • 1 tsp Cornstarch
  • 1 tsp Sesame oil
Directions:
  1. Combine chicken, salt, egg white, and cornstarch. Mix well by hand and set aside.
  2. In a small bowl, blend all sauce ingredients. Set aside.
  3. Add 2 tablespoons oil to heated wok and stir fry chicken. Remove to serving bowl.
  4. Add 2 more tablespoons oil to same wok. Toss peanuts and chili peppers in the wok and stir fry until peppers turn dark red.
  5. Remove from wok and add to chicken. Lower heat.
  6. Stir fry green onions and garlic for several seconds. (Do not let garlic burn.)
  7. Return chicken, peanuts and peppers to wok and stir fry a few seconds to combine.
  8. Add water chestnuts and combined sauce ingredients.
  9. Stir fry untill heated through and thickened (less than a minute) Serve over rice.

Spicy Asian Green Beans

Ingredients: 
  • 1 Tbsp Peanut oil
  • 1 tsp Fresh ginger, minced
  • 1/2 tsp Garlic, minced
  • 1/2 lb. Fresh green beans, trimmed
  • 1 tsp Sugar
  • 2 Tbsp Dry sherry
  • 1/2 tsp Salt
  • 1/2 tsp Crushed red pepper
  • 2 Tbsp Soy sauce
  • 1/2 tsp Cornstarch
  • 1 Tbsp Cold water
  • 1 tsp Sesame oil
Directions:
  1. Coat a wok with a nonstick cooking spray and heat over high heat.
  2. Add peanut oil and heat well. Add ginger and garlic and stir-fry about 30 seconds.
  3. Add green beans and stir-fry 2-3 minutes longer.
  4. Add sugar, sherry, salt, crushed red pepper and soy sauce and stir-fry another 1-2 minutes.
  5. In a small dish, blend cornstarch and water to make a smooth paste, add to wok and cook until the mixture comes to a boil and thickens.
  6. Remove the wok from the heat and add sesame oil. Serve warm or at room temperature.

Fortune Cookie

Ingredients: 
  • 1 cup Margarine, softened
  • 1/2 cup Granulated sugar
  • 1 Egg
  • 2 1/2 tsp Vanilla extract
  • 3 1/4 cup Flour
  • 1/2 tsp Baking powder
Directions:
  1. Combine margarine, sugar, egg, and vanilla. Mix until smooth. Add flour and baking powder. Stir everything together to form a ball of dough.
  2. Lightly flour a wooden board or flat surface. With a rolling pin, roll half of dough very thin. Use a circle-shaped cookie cutter or the top of a large glass (about 2 1/2 inches wide) to cut out circles in dough.
  3. Put a fortune in each circle, off to one side. Fold the circle in half and then in half again. Pinch edges to seal.
  4. Preheat over to 425 degrees.
  5. Re-roll leftover scraps of dough and make cookies from them. Then roll and make cookies from other half of dough.
  6. Bake cookies for about 10 minutes or until they are lightly browned. Cool and Serve.
